Chef Brett is back at it this week, preparing us for back-to-school and trying out some easy recipes for quick breakfasts on the go! This recipe came from a blog reader (thanks, Amy!). Brett did every single step on his own...if a 6-year old can do it, so can you!
4 ripe bananas
3 cups rolled oats
1 3/4 cups applesauce
1 cup dried cranberries (you could use any dried or fresh fruit, really!)
Preheat oven to 350 degrees.
Mash bananas. (He used a potato masher and that seemed to work well).
Stir in 3 cups of rolled oats, 1 3/4 cups applesauce and 1 cup dried cranberries.
Drop scoops of dough on greased cookie sheets and bake for about 15 minutes. Makes approximately 24 cookies.
These cookies don't have a traditionally sweet "cookie taste", but they are super healthy and perfect to grab and go. We are going to eat them for breakfast tomorrow and save a few for the rest of the week. The others will go in the freezer to save for later.
